Ingredients

  • 2 English muffins
  • 4 slices Spam
  • 2 Large eggs
  • 2 slices Cheddar cheese
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Garlic, minced
  • 1 tablespoon Unsalted butter
  • 1 teaspoon Vegetable oil
  • 1 pinch Salt
  • 1 pinch Black pepper

Directions

Step 1

1. Prepare the garlic aioli by mixing the mayonnaise and minced garlic in a small bowl. Set aside for later use.

Step 2

2. Slice the English muffins in half and lightly butter each cut side. Set aside.

Step 3

3. Heat a skillet over medium heat and add the vegetable oil. Once hot, add the Spam slices and cook for 2-3 minutes on each side or until golden brown and crispy. Remove the Spam from the skillet and set aside on a plate lined with paper towels.

Step 4

4. In the same skillet, adjust the heat to medium-low and crack the eggs into the pan. Use a spatula or ring mold to keep the eggs round if preferred. Sprinkle each egg with a pinch of salt and black pepper. Cook for 2-3 minutes, or until the whites are set but the yolks are still runny (or longer if firmer yolks are desired).

Step 5

5. Heat another skillet or griddle over medium heat and toast the buttered English muffin halves, cut side down, until golden and crisp, about 1-2 minutes.

Step 6

6. To assemble the sandwiches, spread the garlic aioli evenly over the toasted sides of the English muffins.

Step 7

7. On the bottom half of each muffin, layer 2 slices of crispy Spam, 1 cooked egg, and 1 slice of cheddar cheese. Top with the remaining muffin halves to complete the sandwich.

Step 8

8. Serve immediately while warm, and enjoy your gourmet Spam McMuffin!
