Ingredients

  • 1 pound ground lamb (or ground beef for variation)
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 0.5 cup red wine
  • 1 cup beef or chicken broth
  • 1.5 tablespoons Worcestershire sauce
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon fresh rosemary, minced
  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 pounds potatoes (Russet or Yukon Gold), peeled and quartered
  • 0.5 cup heavy cream
  • 0.5 cup shredded cheddar cheese (optional, for topping)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a large pot, add the peeled and quartered potatoes. Cover with cold water, add 1 teaspoon of salt, and bring to a boil. Cook until tender, about 15 minutes. Drain and set aside.

Step 3

While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add the ground lamb and cook until browned, about 5-7 minutes. Remove the lamb and set aside.

Step 4

In the same skillet, add the butter. Sauté the onion, carrots, and celery over medium heat until softened, about 5 minutes. Stir in the garlic, tomato paste, thyme, and rosemary, cooking for another minute until fragrant.

Step 5

Return the cooked lamb to the skillet and sprinkle the flour over the mixture. Stir to combine and cook for 2 minutes to remove the raw flour taste.

Step 6

Deglaze the skillet with the red wine, scraping up any browned bits from the bottom. Let the wine reduce slightly, about 2 minutes.

Step 7

Stir in the broth, Worcestershire sauce, and frozen peas. Simmer for 5 minutes, until the sauce thickens. Season with remaining salt and black pepper. Remove from heat.

Step 8

Mash the boiled potatoes with the heavy cream and 2 tablespoons of melted butter. Season with a pinch of salt and pepper to taste.

Step 9

Spread the meat mixture evenly into a 9x13-inch baking dish. Spoon the mashed potatoes on top, spreading gently to create an even layer. If using, sprinkle shredded cheddar cheese over the potatoes.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbling. For a crispier topping, broil for an additional 2-3 minutes.

Step 11

Let the Shepherd’s Pie rest for 5 minutes before serving. Enjoy your gourmet meal!
