Ingredients

  • 4 Portabella mushroom caps
  • 4 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 3 Garlic cloves, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 Burger buns
  • 4 Cheddar cheese slices
  • 1 cup Arugula
  • 1 Tomato, sliced
  • 1 Red onion, thinly sliced
  • 0.5 cup Mayonnaise
  • 1 teaspoon Lemon juice
  • 0.5 teaspoon Garlic powder

Directions

Step 1

Clean the portabella mushroom caps by gently wiping them with a damp cloth and remove the stems.

Step 2

In a small bowl, whisk together 3 tablespoons olive oil, balsamic vinegar, minced garlic, salt, and black pepper.

Step 3

Brush the marinade all over the mushroom caps, ensuring they are well coated. Let them marinate for 10 minutes.

Step 4

While the mushrooms marinate, prepare the garlic aioli by mixing the mayonnaise, lemon juice, and garlic powder in a small bowl. Set aside.

Step 5

Preheat a grill or stovetop grill pan to medium-high heat.

Step 6

Brush the grill with the remaining 1 tablespoon of olive oil to prevent sticking.

Step 7

Place the marinated mushrooms on the grill, gill side down. Cook for 4-5 minutes per side, or until tender and slightly charred. Add a slice of cheddar cheese to the top of each mushroom cap during the last minute of cooking to allow it to melt.

Step 8

Toast the burger buns on the grill for 1-2 minutes, until lightly golden.

Step 9

Assemble the burgers by spreading a generous layer of garlic aioli on the bottom bun. Top with the grilled mushroom (cheese side up), arugula, tomato slices, and red onion. Finish with the top bun.

Step 10

Serve immediately and enjoy your flavorful gourmet portabella mushroom burger!
