  • 3 lbs Yukon Gold potatoes
  • 6 tbsp Unsalted butter
  • 1.5 cups Heavy cream
  • 1 cup Sour cream
  • 2 cups Shredded sharp cheddar cheese

  • 2 cloves Minced garlic
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 0.75 cups Breadcrumbs
  • 2 tbsp Olive oil
  • 0.25 cups Fresh chopped chives

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or a small amount of butter.

Step 2

Peel and chop the Yukon Gold potatoes into even-sized chunks. Place them in a large pot and add enough water to cover them. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 15-20 minutes or until the potatoes are fork-tender.

Drain the potatoes and return them to the pot. Allow the potatoes to sit for a minute to let any excess moisture evaporate.
