  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup panko breadcrumbs (optional topping)
  • 1 tbsp olive oil (for topping)
  • 1 cup mix-ins such as cooked bacon, sautéed mushrooms, or steamed broccoli (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Step 2

In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a smooth roux. Cook for 1-2 minutes, stirring constantly, to eliminate the raw flour taste.
