Ingredients

  • 500 grams fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 50 grams sliced almonds
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 0.25 teaspoon crushed red pepper flakes (optional)

Directions

Step 1

Bring a large pot of water to a boil and add 1 teaspoon of salt.

Step 2

Add the green beans to the boiling water and blanch for 2-3 minutes until they are vibrant green and slightly tender.

Step 3

Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Drain again after 2 minutes and set aside.

Step 4

Heat a large skillet over medium heat and add the sliced almonds. Toast them while stirring frequently for 2-3 minutes until golden brown. Transfer the almonds to a plate and set aside.

Step 5

In the same skillet, add the olive oil and minced garlic. Sauté the garlic for 30 seconds until fragrant, being careful not to burn it.

Add the blanched green beans to the skillet and toss to combine with the garlic.
