Ingredients

  • 500 g beef chuck or stew meat
  • 300 g potatoes
  • 2 medium yellow onion
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 2 cloves garlic
  • 2 tbsp tomato paste
  • 2 tbsp paprika powder (sweet)
  • 1 tsp spicy paprika powder
  • 1 tsp caraway seeds
  • 1 liter beef broth
  • 400 g canned diced tomatoes
  • 2 tbsp sunflower oil (or vegetable oil)
  • 1 tsp salt
  • 0.5 tsp pepper
  • 250 ml water
  • 1 tbsp fresh parsley (optional, for garnish)

Directions

Step 1

Cut the beef into bite-sized cubes, about 2 cm in size. Peel and dice the potatoes into similar-sized pieces. Finely chop the onion and garlic. Dice the red and green bell peppers into small chunks.

Step 2

Heat the sunflower oil in a large pot over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef and set aside.

Step 3

In the same pot, add the chopped onions and sauté until translucent. Stir in the garlic and cook for another minute until fragrant.

Step 4

Add the tomato paste, sweet paprika powder, spicy paprika powder, and caraway seeds to the pot. Stir well to coat the onions and garlic in the spices.

Return the browned beef to the pot. Pour in the beef broth, canned diced tomatoes, and water. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for about 60 minutes, stirring occasionally.

After 60 minutes, add the diced potatoes and bell peppers to the soup. Stir well and cook uncovered for another 30 minutes or until the potatoes are tender.
