Ingredients

  • 1 head Green cabbage
  • 1 pound Ground beef
  • 0.5 pounds Ground pork
  • 1 cup Cooked white rice
  • 1 medium, finely chopped Yellow onion
  • 3 cloves, minced Garlic
  • 1 large Egg
  • 1 teaspoon Paprika
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh parsley
  • 28 ounces Canned crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 cup Beef broth
  • 1 teaspoon Sugar
  • 1 tablespoon Vegetable oil

Directions

Step 1

Bring a large pot of water to a boil. Core the green cabbage and carefully place it in the boiling water. Blanch the cabbage for 3-5 minutes, gently removing leaves as they become pliable. Set aside 12 large leaves and pat dry.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, cooked rice, chopped onion, minced garlic, egg, paprika, 1 teaspoon of salt, black pepper, and parsley. Mix until well combined.

Step 3

Lay one cabbage leaf flat on a surface. Place 2-3 tablespoons of the meat mixture near the stem end. Fold the sides of the leaf inward, then roll tightly from the stem end to form a neat parcel. Repeat with the remaining leaves and filling.

Step 4

In a large, deep skillet or Dutch oven, heat the vegetable oil over medium heat. Sear the cabbage rolls seam-side down for 2-3 minutes until lightly browned (work in batches if needed). Remove from the skillet and set aside.

Step 5

In the same skillet, combine the crushed tomatoes, tomato paste, beef broth, sugar, and the remaining 0.5 teaspoon of salt. Stir well and bring the sauce to a gentle simmer.

Step 6

Return the cabbage rolls to the skillet, nestling them into the tomato sauce seam-side down. Spoon some sauce over the rolls to coat them.

Step 7

Cover the skillet with a lid or foil and reduce the heat to low. Simmer the Golabki for 60-75 minutes, occasionally spooning sauce over the rolls to keep them moist.

Step 8

Serve the Golabki hot, garnished with additional parsley if desired, and enjoy a hearty, satisfying meal.
