Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds beef chuck, cut into bite-sized pieces
  • 1 large yellow onion, diced
  • 3 units garlic cloves, minced
  • 2 tablespoons paprika (sweet or smoked)
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 14 ounces diced tomatoes, canned
  • 2 units bay leaves
  • 1 large red bell pepper, diced
  • 2 medium carrots, sliced
  • 3 medium potatoes, peeled and cubed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup sour cream (optional, for serving)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.

Step 2

Add the beef chuck pieces in batches and sear until browned on all sides. Remove the browned beef and set aside.

Step 3

In the same pot, reduce the heat to medium and add the diced onion. Cook for 4-5 minutes until softened.

Step 4

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Add the paprika and tomato paste, stirring to coat the onions and garlic, and cook for 1-2 minutes to release the flavors.

Step 6

Pour in the beef broth and canned diced tomatoes, scraping the bottom of the pot to deglaze. Bring the mixture to a simmer.

Add the seared beef back into the pot along with the bay leaves, red bell pepper, carrots, and potatoes. Stir to combine.

Step 8

Season with salt and black pepper, then reduce the heat to low. Cover the pot and let the goulash simmer for 1 to 1.5 hours, stirring occasionally, until the beef is tender and the vegetables are cooked through.

Step 9

Remove and discard the bay leaves. Adjust the seasoning with more salt and pepper, if needed.

Step 10

Serve hot, topped with a dollop of sour cream and a sprinkle of fresh parsley if desired.
