Ingredients

  • 2 slices Thick-cut bread slices (sourdough or brioche recommended)
  • 1 Large egg
  • 1 tablespoon Salted butter
  • 2 slices Cheddar cheese (or your preferred melty cheese)
  • 2 Bacon strips
  • 1 tablespoon Mayonnaise
  • 0.5 cup Fresh spinach leaves (optional)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat a nonstick skillet over medium heat. Place the bacon strips in the skillet and cook until crisp, about 4-5 minutes, flipping halfway through. Remove the bacon and set it aside on a plate lined with paper towels. Discard excess grease, leaving about 1 teaspoon in the skillet.

Step 2

Crack the egg into the skillet and sprinkle with a pinch of salt and black pepper. Cook the egg to your preferred doneness, either sunny side up or over easy. Set aside the cooked egg on a plate.

Step 3

Spread butter on one side of each bread slice. Spread mayonnaise on the other side of one of the bread slices.
