  • 3 sprigs fresh thyme sprigs
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper, freshly cracked
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Season the chicken thighs with a pinch of salt and pepper on both sides. Add the chicken to the pot and sear for 3-4 minutes on each side, or until golden brown. Remove the chicken and set aside.

In the same pot, add the diced onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables begin to soften.
