Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 1 red bell pepper, thinly sliced
  • 1 zucchini, cut into matchsticks
  • 1 cup baby corn, halved
  • 3 scallions, chopped
  • 0.5 teaspoon crushed red pepper flakes
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro, chopped (for garnish)
  • 1 tablespoon olive oil

Directions

Step 1

Rinse the shrimp under cold water and pat dry with paper towels. Set aside.

Step 2

In a small bowl, whisk together the low-sodium soy sauce, sesame oil, minced garlic, grated ginger, and crushed red pepper flakes to create the sauce. Set aside.

Step 3

Heat a large wok or skillet over medium-high heat and add the olive oil.

Step 4

Once the oil is hot, add the shrimp to the wok in a single layer. Cook for about 2 minutes on each side until the shrimp turns pink and is fully cooked. Remove the shrimp from the wok and set aside.

Step 5

In the same wok, add the red bell pepper, zucchini, and baby corn. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Step 6

Add the cooked shrimp back into the wok along with the prepared sauce. Toss everything together and cook for another 1-2 minutes to heat through.

Step 7

Turn off the heat and drizzle the lime juice over the dish. Toss again to combine.

Step 8

Garnish with chopped cilantro and scallions before serving.

Step 9

Serve hot and enjoy a flavorful, South Beach-friendly meal!
