Ingredients

  • 1.5 cups Bran cereal
  • 1 cup Milk
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt
  • 1 teaspoon Ground cinnamon
  • 0.75 cup Splenda Granulated Sweetener
  • 0.25 cup Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners, or lightly grease the cups with cooking spray.

Step 2

In a medium mixing bowl, combine the bran cereal and milk. Let the mixture sit for about 5 minutes to soften the cereal.

Step 3

In a separate large bowl, whisk together the all-purpose flour, baking powder, salt, ground cinnamon, and Splenda granulated sweetener.

Step 4

Add the vegetable oil, eggs, and vanilla extract to the softened cereal mixture. Stir to combine.

Step 5

Pour the wet mixture into the dry ingredients and gently mix until just combined. Be careful not to overmix; the batter will be thick.

Step 6

If using raisins, fold them into the batter at this stage.

Step 7

Divide the batter evenly between the prepared muffin cups, filling each about 2/3 full.

Step 8

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Store any leftovers in an airtight container for up to 3 days.
