Ingredients

  • 500 grams Button mushrooms (or cremini mushrooms)
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 2 units Shallots, finely chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Fresh thyme leaves
  • 60 ml Dry white wine (optional)
  • 250 ml Chicken or vegetable broth
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Clean the mushrooms by gently wiping them with a damp paper towel to remove any dirt. Trim the stems if necessary and leave the mushrooms whole if they are small, or slice them in half if they are larger.

Step 2

In a large skillet or sauté pan, heat the butter and olive oil over medium heat until the butter is melted and bubbly.

Step 3

Add the shallots to the skillet and sauté until softened and translucent, about 2 minutes. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 4

Add the mushrooms to the skillet and stir to coat them evenly with the butter and oil mixture. Allow the mushrooms to cook undisturbed for 3-4 minutes to develop a golden-brown color on one side. Then stir and continue cooking for another 2-3 minutes.

Step 5

Sprinkle the fresh thyme leaves over the mushrooms and stir to combine. If using white wine, pour it into the skillet and let it simmer for 1-2 minutes to reduce slightly.

Step 6

Pour the chicken or vegetable broth into the skillet, season with salt and black pepper, and bring the mixture to a gentle simmer. Cover the skillet with a lid and let the mushrooms braise for 12-15 minutes, stirring occasionally, until they are tender and infused with flavor.

Step 7

Remove the lid and let the liquid reduce slightly if a thicker sauce is desired. Taste and adjust seasoning as needed.

Step 8

Transfer the braised mushrooms to a serving dish, garnish with freshly chopped parsley, and serve warm.
