  • 0.5 cups Coconut oil (melted and slightly cooled)

  • 1 teaspoons Vanilla extract
  • 1 large Egg
  • 0.75 cups Dark chocolate chips (at least 70% cocoa)
  • 0.5 cups Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the whole wheat flour, baking soda, and salt. Set aside.

Step 3

In a larger mixing bowl, combine the melted coconut oil, maple syrup, and vanilla extract. Whisk until smooth.

Step 4

Add the egg to the wet ingredients and whisk until fully incorporated.

Gradually add the dry ingredients to the wet ingredients, stirring gently with a spatula until just combined. Avoid overmixing.
