Ingredients

  • 500 grams fresh green beans, trimmed and halved
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 250 milliliters milk
  • 250 milliliters chicken stock
  • 120 grams grated sharp cheddar cheese
  • 1 cup seasoned bread crumbs
  • 1 yellow onion, finely chopped
  • 250 grams button mushrooms, sliced
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 2-quart casserole dish.

Step 2

Fill a large pot with water and bring it to a boil. Add a pinch of salt and blanch the green beans for 3-4 minutes. Drain and immediately transfer them to an ice water bath to stop the cooking process. Drain again and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sliced mushrooms, cooking until softened, about 5-7 minutes. Season with salt and pepper, then remove from heat and set aside.
