Ingredients

  • 2 pounds beef stew meat
  • 2 tablespoons olive oil
  • 2 medium yellow onions, diced
  • 3 garlic cloves, minced
  • 4 medium carrots, peeled and sliced
  • 4 medium potatoes, diced
  • 3 celery stalks, chopped
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.

Step 2

Season the beef stew meat with salt and pepper, then add it to the pot in batches to brown on all sides. Remove and set aside.

Step 3

In the same pot, add the diced onions and cook for 3-4 minutes, stirring frequently, until softened.

Step 4

Add the minced garlic and cook for 1 more minute until fragrant.

Step 5

Sprinkle the flour over the onions and garlic. Stir well to form a roux, cooking for 1-2 minutes to eliminate the raw flour taste.

Step 6

Return the browned beef to the pot, along with the carrots, potatoes, and celery.

Step 7

Pour in the beef broth, then add the tomato paste and Worcestershire sauce. Stir to combine.

Step 8

Add bay leaves, dried thyme, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.

Step 9

Bring the stew to a boil, then reduce the heat to low and cover the pot. Simmer gently for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the vegetables are fully cooked.

Step 10

Taste and adjust seasoning with additional salt or pepper, if needed.

Step 11

Serve hot, garnished with fresh parsley if desired. Enjoy!
