Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 1 cup Apricot preserves
  • 1 cup French dressing
  • 1 packet Dry onion soup mix
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken thighs dry with paper towels and season both sides with salt and black pepper.

Step 3

In a large oven-safe skillet or baking dish, heat the olive oil over medium-high heat.

Step 4

Sear the chicken thighs skin-side down for 3-4 minutes until golden brown. Flip and sear the other side for 2-3 minutes. Remove the chicken from the skillet and set aside.

Step 5

In a medium mixing bowl, combine the apricot preserves, French dressing, and dry onion soup mix. Stir until well blended.

Step 6

Pour a thin layer of the sauce mixture into the bottom of your baking dish or skillet. Arrange the seared chicken thighs on top of the sauce.

Step 7

Pour the remaining sauce evenly over the chicken, ensuring all pieces are coated.

Step 8

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 40 minutes.

Step 9

Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the sauce is bubbly and slightly thickened.

Step 10

Let the chicken rest for 5 minutes before serving. Serve with rice, mashed potatoes, or a side of your choice.
