Add the olive oil, salt, and half of the whole wheat flour to the yeast mixture. Stir to combine using a wooden spoon or silicone spatula.
Gradually add the remaining whole wheat flour, bread flour, and toasted sunflower seeds. Mix until the dough starts to come together.
Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, until the dough is smooth and elastic. Alternatively, knead using a stand mixer with a dough hook on medium speed for about 5-6 minutes.
