Ingredients

  • 3 large Egg yolks
  • 100 grams Granulated sugar
  • 1 teaspoon Orange zest
  • 150 milliliters Orange juice
  • 200 milliliters Whipping cream
  • 8 grams Powdered gelatin
  • 2 tablespoons Cold water
  • 50 grams Almonds
  • 25 grams Butter
  • 1 tablespoon Honey
  • 1 sheet Edible gold leaf

Directions

Step 1

In a small bowl, sprinkle the powdered gelatin over the cold water and let it bloom for 5 minutes.

Step 2

In a heatproof bowl, whisk the egg yolks and granulated sugar until pale and creamy. Stir in the orange zest and orange juice.

Step 3

Place the bowl over a pot of gently simmering water and cook the mixture, stirring constantly, until it thickens enough to coat the back of a spoon (about 7-8 minutes).

Step 4

Remove the bowl from heat and stir in the bloomed gelatin until fully dissolved. Allow the mixture to cool to room temperature.

In a separate bowl, whip the cream to soft peaks. Gently fold the whipped cream into the cooled orange mixture until fully incorporated. Set aside.
