Ingredients

  • 2 lbs Yukon Gold potatoes
  • 6 tbsp Unsalted butter
  • 1 cup Milk
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 6 slices Thick-cut bacon
  • 1 large Yellow onion
  • 1 tbsp Olive oil
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Peel and chop the Yukon Gold potatoes into evenly sized chunks for even cooking.

Step 2

Place the potatoes in a large pot, cover with cold water, and add 1 tsp of salt. Bring to a boil over medium-high heat and cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

Step 3

While the potatoes cook, prepare the bacon. In a large skillet over medium heat, cook the thick-cut bacon slices until crispy, about 8-10 minutes. Remove the bacon and place on a plate lined with paper towels to drain, then crumble the bacon into small pieces. Set aside.

Using the same skillet, drain most of the bacon grease, leaving about 1 tbsp. Add 1 tbsp of olive oil to the skillet if needed. Thinly slice the yellow onion and sauté in the skillet over medium-low heat, stirring frequently, until golden and caramelized, about 8-10 minutes. Remove from heat and set aside.

Step 5

Drain the cooked potatoes and return them to the pot. Add the unsalted butter and milk, then mash with a potato masher or ricer until smooth and creamy.

Season the mashed potatoes with 1 tsp of salt and 0.5 tsp of black pepper, adjusting to taste. Mix thoroughly.

Fold in half of the crumbled bacon and half of the fried onions into the mashed potatoes for extra flavor.
