Ingredients

  • 4 tablespoons unsalted butter
  • 0.5 cup granulated sugar
  • 0.25 cup lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • 0.25 cup water
  • 1 tablespoon cornstarch
  • 2 large egg yolks
  • 0.125 teaspoon salt

Directions

Step 1

In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and set aside.

Step 2

In a medium bowl, whisk together the egg yolks, granulated sugar, lemon juice, lemon zest, and salt until smooth and well-combined.

Step 3

In a separate small cup, mix the water and cornstarch until fully dissolved to create a slurry. Gradually whisk this slurry into the egg yolk mixture.

Step 4

Slowly add the melted butter into the bowl while whisking continuously to prevent the eggs from curdling.

Step 5

Pour the mixture back into the saucepan and set it over low to medium heat. Stir constantly with a silicone spatula or whisk to ensure even cooking.

Step 6

Cook the sauce for about 5-7 minutes, or until it thickens to a creamy, velvety consistency. Do not let the sauce boil, as it could cause it to curdle.

Step 7

Once thickened, remove the sauce from heat and strain it through a fine-mesh sieve to remove any lumps.

Step 8

Allow the sauce to cool slightly before serving. It can be served warm or chilled, depending on your preference.

Step 9

Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat gently before serving if desired.
