In a large mixing bowl, combine 2 cups of the flour, granulated sugar, yeast, ground nutmeg, and salt. Stir until evenly combined.
Add the warm eggnog, melted butter, egg yolks, and vanilla extract to the bowl. Mix with a wooden spoon or dough hook until the ingredients come together.
