Ingredients

  • 2 medium-sized golden potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 4 eggs
  • 2 tablespoons milk
  • 1 cup sharp cheddar cheese, shredded
  • 2 scallions, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoons garlic powder
  • 0.5 teaspoons paprika
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Wash and dice the golden potatoes into small cubes (about 1/2-inch pieces) for even cooking.

Step 2

Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat.

Step 3

Add the diced potatoes to the skillet and sprinkle with 1/2 teaspoon of salt. Stir occasionally and cook for 10-12 minutes, or until the potatoes are golden and tender.

Step 4

While the potatoes are cooking, whisk together the eggs, milk, garlic powder, paprika, 1/2 teaspoon of salt, and black pepper in a medium bowl until well-combined.

Step 5

Once the potatoes are cooked, push them to one side of the skillet and add 1 tablespoon of butter to the empty side.

Step 6

Pour the egg mixture into the skillet and let it sit for 30 seconds to begin setting.

Step 7

Using a spatula, gently stir and fold the eggs as they cook, incorporating the potatoes in the process.

Step 8

When the eggs are about 80% cooked, sprinkle the shredded cheddar cheese evenly over the top and continue to fold until the eggs are fully cooked and the cheese is melted.

Step 9

Remove the skillet from the heat and stir in the chopped scallions and parsley for a burst of freshness.

Step 10

Serve immediately, garnished with an extra sprinkle of parsley if desired. Enjoy your Gold Rush Scramble warm!
