  • 2 cups Basmati rice
  • 3 cups Water
  • 1 pinch Saffron threads
  • 2 tablespoons Vegetable oil
  • 1 large, diced Onion
  • 4 minced Garlic cloves
  • 1 medium, diced Carrot
  • 1 cup Green peas
  • 1 medium, diced Red bell pepper
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Ground turmeric
  • 1 teaspoon Salt
  • 0.25 cup, chopped Cilantro

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Set it aside to drain.

Step 2

In a small bowl, soak the saffron threads in 2 tablespoons of warm water. Let it steep while you prep the other ingredients.

Step 3

Heat the vegetable oil in a large saucepan over medium heat.

Step 4

Add the diced onion to the pan and sauté until soft and translucent, about 3-4 minutes.

Step 5

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 6

Add the diced carrot, green peas, and red bell pepper. Cook for about 5 minutes until the vegetables are slightly tender.

Step 7

Stir in the ground cumin, turmeric, and salt. Mix well to coat the vegetables with the spices.

Add the rinsed rice to the saucepan, stirring gently to combine it with the vegetables and spices.

Pour in the 3 cups of water and the prepared saffron infusion (including the threads). Bring the mixture to a boil.

Remove the saucepan from the heat and let it sit, covered, for 5 minutes to allow the flavors to meld.
