Ingredients

  • 6 phyllo pastry sheets
  • 8 oz goat cheese
  • 4 tbsp unsalted butter, melted
  • 2 tbsp honey
  • 1 tsp fresh thyme leaves
  • 0.25 tsp cracked black pepper
  • 0.25 tsp sea salt

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

Cut the phyllo pastry sheets in half to create 12 smaller rectangles. Keep the sheets covered with a damp cloth to prevent them from drying out while you work.

Step 3

In a small bowl, combine the goat cheese, honey, thyme leaves, black pepper, and sea salt. Mix well to create a creamy filling.

Step 4

Take one rectangle of phyllo pastry and lightly brush it with melted butter. Place another rectangle on top and brush it lightly with more butter, creating a layer of two sheets.

Step 5

Spoon about 1 tablespoon of the goat cheese mixture onto one end of the layered phyllo. Fold the sides of the phyllo over the filling, then roll it up like a burrito, ensuring the filling is enclosed. Repeat with the remaining phyllo sheets and goat cheese mixture.

Step 6

Place the phyllo-wrapped goat cheese onto the prepared baking sheet, seam-side down. Brush the tops lightly with melted butter.

Step 7

Bake in the preheated oven for 12-15 minutes, or until the phyllo is golden brown and crispy.

Step 8

Remove from the oven and let cool for 5 minutes. Drizzle with additional honey if desired, and serve warm as an appetizer or snack.
