Ingredients

  • 3 cups Frozen hash browns
  • 4 tablespoons Butter, melted
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 5 large Eggs
  • 1 cup Heavy cream
  • 4 ounces Goat cheese, crumbled
  • 1 cup Fresh spinach, chopped
  • 0.5 cup Cherry tomatoes, halved
  • 1 clove Garlic, minced
  • 0.125 teaspoons Nutmeg

Directions

Step 1

Preheat the oven to 400°F (200°C). Grease a 9-inch pie dish or quiche pan generously with butter or non-stick spray.

Step 2

In a large mixing bowl, combine the frozen hash browns, melted butter, salt, and pepper. Mix well to coat the hash browns evenly.

Step 3

Press the hash brown mixture firmly into the bottom and up the sides of the prepared dish to form a crust. Bake for 20 minutes, or until the edges are golden and the crust is set.

Step 4

While the crust is baking, prepare the filling. In a medium bowl, whisk together the eggs, heavy cream, nutmeg, and a pinch of salt and pepper until fully combined.

Step 5

Once the crust is done, scatter the chopped spinach, halved cherry tomatoes, and minced garlic evenly over the bottom of the crust. Crumble the goat cheese on top of the vegetables.

Step 6

Pour the egg and cream mixture over the fillings, making sure it spreads evenly and fills all gaps.

Step 7

Reduce the oven temperature to 375°F (190°C) and bake the quiche for 30 minutes, or until the filling is set and slightly golden on top.

Step 8

Remove from the oven and let the quiche rest for 5-10 minutes before slicing and serving. Enjoy warm or at room temperature.
