Ingredients

  • 1 lb ground beef
  • 4 oz goat cheese
  • 1 red onion
  • 2 tbsp butter
  • 8 slider buns
  • 1 cup baby arugula
  • 2 large sweet potatoes
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 1 tsp brown sugar
  • 0.5 cup mayonnaise
  • 1 tbsp Dijon mustard

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

Peel the sweet potatoes and cut them into thin wedges or fries.

Step 3

In a large mixing bowl, toss the sweet potato fries with 2 tablespoons of olive oil, paprika, garlic powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.

Step 4

Spread the fries on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through, until golden and crisp.

Step 5

While the fries are baking, prepare the caramelized red onions. Slice the red onion thinly.

Step 6

In a skillet over medium heat, melt 2 tablespoons of butter. Add the sliced red onions, 1 teaspoon of salt, and the brown sugar. Cook for 10-12 minutes, stirring occasionally, until the onions are soft and caramelized. Remove from heat and set aside.

Step 7

In another bowl, mix the ground beef with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Form the mixture into 8 small patties, approximately 2 inches in diameter.

Step 8

Heat 1 tablespoon of olive oil in a skillet or grill pan over medium-high heat. Cook the sliders for 3-4 minutes on each side, or until cooked to your preferred doneness.

Step 9

During the last minute of cooking, top each patty with a slice of goat cheese to allow it to melt slightly.

Step 10

Toast the slider buns briefly in the same pan or under a broiler until golden.

Step 11

Assemble the sliders by spreading a thin layer of mayonnaise mixed with Dijon mustard on the bottom halves of the buns. Add a small handful of baby arugula, a slider patty with melted goat cheese, and a spoonful of caramelized onions. Top with the other half of the bun.

Step 12

Serve the sliders hot alongside the sweet potato fries. Enjoy!
