Ingredients

  • 300 g Puff pastry
  • 200 g Soft goat's cheese
  • 3 large Shallots
  • 2 medium-sized Leeks
  • 30 g Unsalted butter
  • 1 tbsp Olive oil
  • 1 tsp Fresh thyme leaves
  • 1 Egg
  • 50 ml Heavy cream
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Roll out the puff pastry into a rectangle about 3-4mm thick and transfer it to the prepared baking sheet. Using a knife, gently score a 1.5cm border around the edges, being careful not to cut all the way through.

Step 3

Peel and thinly slice the shallots. Slice the leeks lengthwise and then into thin half-moons. Rinse them thoroughly under cold water to remove any grit and pat dry.

Step 4

In a large skillet, heat the butter and olive oil over medium heat. Add the shallots and cook for 3-4 minutes until slightly softened.

Step 5

Add the leeks to the skillet along with the thyme leaves, salt, and pepper. Cook for another 8-10 minutes, stirring occasionally, until the leeks are soft and lightly caramelized. Remove from heat and set aside to cool slightly.

Step 6

In a small bowl, whisk together the egg and heavy cream. Set aside.

Step 7

Crumble the goat's cheese evenly over the center of the puff pastry, staying within the scored border.

Step 8

Spread the cooked shallot and leek mixture evenly over the goat’s cheese.

Step 9

Brush the egg and cream mixture over the exposed pastry border to give it a golden finish.

Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.

Remove the tart from the oven and let it cool slightly before slicing and serving. Enjoy warm or at room temperature.
