Ingredients

  • 1 cup Polenta (coarse-ground cornmeal)
  • 4 cups Vegetable broth
  • 1 cup Goat's cheese (crumbled)
  • 2 tablespoons Unsalted butter
  • 0.25 cup Grated Parmesan cheese
  • 2 tablespoons Olive oil
  • 12 ounces Mixed mushrooms (such as cremini, shiitake, or oyster)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

In a medium saucepan, bring the vegetable broth to a gentle boil over medium heat.

Step 2

Gradually whisk in the polenta, ensuring no lumps form. Reduce the heat to low and cook, stirring frequently, for 15-20 minutes or until the polenta is thick and creamy.

Step 3

Stir in the goat's cheese, butter, grated Parmesan, and half of the salt and black pepper. Mix until the cheese and butter are fully melted and incorporated. Keep the polenta warm on low heat while preparing the mushrooms.

Step 4

In a large skillet, heat the olive oil over medium heat. Add the mixed mushrooms and sauté for 5-7 minutes, stirring occasionally, until they are browned and softened.

Step 5

Add the minced garlic, fresh thyme, and remaining salt and black pepper to the mushrooms. Cook for an additional 1-2 minutes until fragrant.

Step 6

To serve, divide the polenta among warmed plates or shallow bowls. Spoon the sautéed mushrooms over the top.

Step 7

Garnish with freshly chopped parsley and an optional drizzle of olive oil. Serve immediately.
