Ingredients

  • 200 g Goat's cheese
  • 3 Red bell peppers
  • 3 tbsp Extra virgin olive oil
  • 1 tbsp Balsamic vinegar
  • 1 tsp Honey
  • 1 clove Garlic
  • 100 g Mixed salad greens (arugula, spinach, etc.)
  • 6 Fresh basil leaves
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Pine nuts (optional)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Rinse the red bell peppers, place them on a baking tray, and roast them in the oven for 25-30 minutes, turning occasionally, until the skins are blistered and slightly charred.

While the peppers are roasting, slice the goat's cheese into 1 cm thick rounds and set aside.

Toast the pine nuts (if using) in a dry skillet over medium heat until golden brown and fragrant, about 2-3 minutes. Set aside.
