Ingredients

  • 1 sheet puff pastry sheet
  • 150 grams goat's cheese
  • 250 grams cherry tomatoes
  • 2 tablespoons extra virgin olive oil
  • 5 sprigs fresh thyme
  • 1 large egg
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon all-purpose flour (for dusting)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Lightly dust a clean work surface with flour and roll out the puff pastry sheet into a rectangle about 12x8 inches (if it’s not pre-rolled). Transfer it onto the prepared baking sheet.

Step 3

Using a sharp knife, score a border about 1 inch from the edges of the pastry, being careful not to cut all the way through. This will allow the edges to puff up while baking.

Step 4

Prick the inside of the scored rectangle with a fork multiple times to prevent it from puffing too much during baking.

Step 5

In a small bowl, whisk the egg and lightly brush it over the edges of the pastry.

Step 6

Slice the cherry tomatoes in halves and place them in a mixing bowl. Drizzle with olive oil, sprinkle with salt and black pepper, and toss to coat evenly.

Step 7

Crumble the goat's cheese evenly over the inside of the scored rectangle on the pastry.

Step 8

Distribute the cherry tomato halves, cut side up, on top of the goat's cheese. Strip the leaves off the thyme sprigs and scatter them over the tomatoes.

Step 9

Bake in the preheated oven for 18–20 minutes, or until the pastry is golden brown and crispy.

Step 10

Remove from the oven and allow to cool slightly before slicing into four portions. Serve warm or at room temperature.
