Ingredients

  • 500 g Potato gnocchi
  • 150 g Baby spinach
  • 3 pieces Garlic cloves
  • 2 tbsp Olive oil
  • 1 tbsp Unsalted butter
  • 50 g Parmesan cheese (grated)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

While waiting for the water to boil, finely mince the garlic cloves and set them aside. Rinse the baby spinach and pat it dry.

Step 3

Once the water is boiling, add the gnocchi and cook until they float to the surface, about 2-3 minutes. Use a slotted spoon to transfer them to a plate. Reserve 1/2 cup of the cooking water.

Step 4

In a large skillet, heat the olive oil and butter over medium heat. Once the butter has melted, add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 5

Add the baby spinach to the skillet and cook for 2-3 minutes, stirring frequently, until wilted.

Step 6

Return the cooked gnocchi to the skillet and toss to combine. Add a splash of the reserved cooking water to create a light sauce if needed.

Step 7

Season with salt, black pepper, and red pepper flakes, if desired. Toss well to coat evenly.

Step 8

Remove the skillet from heat and sprinkle the grated Parmesan cheese over the gnocchi. Gently toss again to distribute the cheese.

Step 9

Serve the gnocchi hot, garnished with additional Parmesan cheese if desired.
