Ingredients

  • 500 g potato gnocchi
  • 150 g bacon
  • 200 g cottage cheese
  • 50 g grated Parmesan cheese
  • 2 tbsp butter
  • 2 cloves garlic (minced)
  • 2 tbsp milk
  • 2 tbsp fresh parsley (chopped)
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the potato gnocchi and cook according to the package instructions, typically about 2-3 minutes or until they float to the top. Drain and set aside.

Step 2

In a large skillet over medium heat, cook the bacon until it becomes crispy. Remove the bacon from the skillet and place it on a plate lined with paper towels to absorb excess grease. Once cooled, chop the bacon into small pieces.

Step 3

Using the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.

Step 4

Lower the heat to medium-low. Add the cottage cheese and milk to the skillet, stirring to create a smooth, creamy sauce. Season with salt and black pepper to taste.

Step 5

Add the cooked gnocchi to the skillet with the sauce, tossing gently to coat the gnocchi evenly. Cook for 1-2 minutes until the gnocchi are heated through.

Step 6

Stir in the crispy bacon pieces and half of the grated Parmesan cheese.

Step 7

Serve the gnocchi in bowls, garnished with the remaining Parmesan cheese and chopped fresh parsley.
