Ingredients

  • 500 grams gnocchi
  • 250 grams broccoli florets
  • 250 grams mushrooms, sliced
  • 3 units garlic cloves, minced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 50 grams grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions (usually 2-3 minutes, until they float to the surface). Remove with a slotted spoon and set aside. Reserve the pot of water for later use.

Step 2

In the same boiling water, blanch the broccoli florets for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

Step 3

Heat a large skillet over medium heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter. Once melted, add the sliced mushrooms. Sauté for 5-7 minutes until browned and softened.
