Ingredients

  • 16 oz Potato gnocchi
  • 2 tbsp Olive oil
  • 3 large Garlic cloves
  • 8 oz Button mushrooms (sliced)
  • 4 cups Fresh spinach
  • 1.5 cups Grape tomatoes (halved)
  • 0.5 cup Parmesan cheese (grated)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the potato gnocchi and cook according to package instructions, usually about 2-3 minutes. The gnocchi will float to the top when done. Drain the gnocchi and set aside.

Step 2

While the gnocchi cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Add the sliced mushrooms to the skillet and cook for 4-5 minutes until softened and golden, stirring occasionally.

Toss in the fresh spinach and cook for 1-2 minutes until wilted, stirring frequently.

Add the halved grape tomatoes to the skillet and cook for another 2-3 minutes until they begin to soften and release their juices.

Step 7

Return the cooked gnocchi to the skillet and gently toss everything together. Season with salt, black pepper, and red pepper flakes if using.

Step 8

Sprinkle the grated Parmesan cheese over the dish and remove from heat.

Step 9

Serve immediately, garnished with additional Parmesan if desired.
