Directions

Step 1

Wash and boil the potatoes in their skins in a large pot of water for 20-25 minutes, or until tender when pierced with a fork.

Step 2

Drain the potatoes and let them cool slightly. Peel off the skins while they are still warm.

Step 3

Mash the peeled potatoes using a potato ricer or fork until smooth. Spread the mashed potatoes on a clean surface to cool completely.

Sprinkle 1 cup of flour onto the cooled mashed potatoes. Crack the egg into the center, sprinkle with salt, and gently mix together, gradually incorporating the flour.
