Ingredients

  • 3 cups (shredded or diced) cooked turkey
  • 4 tablespoons unsalted butter
  • 1 medium (diced) yellow onion
  • 2 medium (diced) carrots
  • 2 medium (diced) celery stalks
  • 1 cup frozen peas
  • 0.33 cup all-purpose flour
  • 2 cups chicken or turkey broth
  • 0.5 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 sheets (store-bought or homemade; one for bottom and one for top) uncooked pie crust
  • 1 large (beaten for egg wash) egg

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large pan, melt the butter over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, or until the vegetables are soft and slightly translucent.

Step 3

Sprinkle the flour over the vegetables and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.

Step 4

Gradually pour in the broth while constantly stirring to create a smooth sauce. Allow the mixture to come to a gentle simmer and thicken, about 3-5 minutes.

Step 5

Stir in the heavy cream, dried thyme, dried rosemary, salt, and black pepper. Mix well, then fold in the shredded turkey and frozen peas. Remove the filling from heat and set aside.

Step 6

Roll out one pie crust sheet and press it into a 9-inch pie dish, trimming any excess dough around the edges.

Step 7

Pour the turkey filling evenly into the prepared crust.

Step 8

Roll out the second pie crust sheet and lay it over the top of the filling. Pinch the edges of the top and bottom crusts together to seal, then trim any excess dough.

Step 9

Cut a few small slits in the top crust to allow steam to escape during baking.

Step 10

Brush the top crust with the beaten egg to create a golden, glossy finish.

Step 11

Place the pie on a baking sheet to catch any drips, and bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.

Step 12

Allow the pie to cool for 5-10 minutes before slicing and serving. Enjoy!
