Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.
Slice the andouille sausage into thin rounds and cook until browned, about 5 minutes. Remove and set aside.
Season the chicken thighs with 1/2 teaspoon of salt and black pepper. Add them to the pot and sear for 3-4 minutes per side until golden brown. Remove and set aside.
Dice the onion, celery, and green bell pepper, and mince the garlic. Add the remaining tablespoon of olive oil to the pot, then stir in the diced vegetables and garlic. Sauté for 5-7 minutes until softened.
Add the Cajun seasoning, dried thyme, smoked paprika, and bay leaves to the pot, stirring to coat the vegetables in the spices. Cook for 1 minute to toast the spices.
Pour in the canned diced tomatoes (with juices) and chicken stock. Bring to a simmer.
Stir in the long-grain white rice and return the sausage and chicken thighs (cut into bite-sized pieces) to the pot. Cover and simmer on low heat for 20-25 minutes, stirring occasionally to prevent sticking.
Season the shrimp with a pinch of salt and add them to the pot during the last 5 minutes of cooking. Cook until the shrimp are pink and cooked through.
Taste and adjust seasoning with additional salt or Cajun seasoning if needed. Remove the bay leaves before serving.
