Ingredients

  • 2 cups Gluten-free rolled oats
  • 1 cup Gluten-free all-purpose flour
  • 1 cup Shredded unsweetened coconut
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground cinnamon
  • 0.5 cup Unsalted butter
  • 0.5 cup Brown sugar
  • 0.25 cup Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lime zest
  • 0.75 cup Dried pineapple, chopped
  • 0.5 cup White chocolate chips
  • 0.33 cup Chopped macadamia nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium-sized bowl, combine the gluten-free rolled oats, gluten-free all-purpose flour, shredded coconut, baking soda, salt, and ground cinnamon. Stir until evenly mixed and set aside.

Step 3

In a large mixing bowl, beat the unsalted butter, brown sugar, and granulated sugar together using an electric mixer until creamy and smooth, about 2 minutes.

Step 4

Add the egg, vanilla extract, and lime zest to the creamed mixture. Mix until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients and mix until just incorporated.

Step 6

Gently fold in the chopped dried pineapple, white chocolate chips, and macadamia nuts (if using).

Step 7

Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the cookies are lightly golden around the edges.

Step 9

Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days.
