Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 cups Fresh pineapple, diced
  • 1 large Mango, diced
  • 1 medium Red bell pepper, diced
  • 1 cup Coconut milk
  • 1 tablespoon Fresh ginger, grated
  • 2 Garlic cloves, minced
  • 2 tablespoons Fresh lime juice
  • 2 tablespoons Chopped fresh cilantro
  • 4 servings Cooked white or brown rice

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and sear on each side for about 3-4 minutes, or until they are golden brown. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Add the grated ginger and minced garlic, cooking for 1 minute until fragrant.
