Ingredients

  • 2.5 cups Gluten-free all-purpose flour (with xanthan gum)

  • 1 cup Unsalted butter (softened)
  • 1 cup Granulated sugar
  • 1 large Egg
  • 2 teaspoons Pure vanilla extract
  • 0.5 teaspoon Almond extract (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium mixing bowl, whisk together the gluten-free all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, using a hand or stand mixer, beat the softened butter and granulated sugar on medium speed until light and fluffy, about 2–3 minutes.

Step 4

Add the egg, vanilla extract, and almond extract (if using) to the butter-sugar mixture. Beat until fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the dough comes together. Do not overmix.
