Ingredients

  • 200 g Potatoes (peeled and cubed)
  • 250 g Gluten-free all-purpose flour blend
  • 50 g Tapioca starch
  • 1 tsp Xanthan gum
  • 2 tsp Instant yeast
  • 2 tbsp Sugar
  • 1 tsp Salt
  • 2 Eggs (room temperature)
  • 3 tbsp Olive oil
  • 100 ml Milk (dairy or non-dairy, warm)
  • 30 g Butter (melted, optional for brushing)

Directions

Step 1

1. Start by boiling the potatoes in salted water until they are fork-tender, about 10-12 minutes. Drain them and mash into a smooth puree. Let cool to room temperature.

Step 2

2. In a large mixing bowl, combine the gluten-free flour blend, tapioca starch, xanthan gum, instant yeast, sugar, and salt. Mix well to ensure even distribution.

Step 3

3. Add the mashed potatoes, eggs, olive oil, and warm milk to the dry mixture. Using a mixer with a paddle attachment or a wooden spoon, mix until the dough is smooth and slightly sticky.

Step 4

4. Cover the bowl with a clean kitchen towel and let the dough rise in a warm spot for about 1 hour, or until it has doubled in volume.

Step 5

5. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 6

6. Lightly oil your hands to handle the sticky dough. Divide the dough into 8 equal portions and shape each piece into a roll. Place the rolls on the prepared baking sheet, leaving space between them for expansion.

Step 7

7. Cover the rolls with the kitchen towel and let them rise again for 20-25 minutes, or until they are puffed up.

Step 8

8. Optionally, brush the tops with melted butter for extra flavor and a golden crust.

Step 9

9. Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown and sound hollow when tapped on the bottom.

Step 10

10. Allow the rolls to cool slightly on a wire rack before serving. Enjoy warm or at room temperature!
