  • 2 cups Grated carrots
  • 1 medium Grated apple
  • 0.5 cup Raisins
  • 0.5 cup Chopped walnuts or pecans (optional)
  • 0.5 cup Unsweetened shredded coconut (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and prepare a standard 12-cup muffin tin by lining it with paper liners or greasing it with cooking spray.
