  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter (softened) or coconut oil
  • 0.5 cup Brown sugar
  • 2 tablespoons Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 Large egg
  • 0.5 cup Chocolate chips or raisins (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium mixing bowl, combine the almond flour, coconut flour, ground flaxseed, shredded coconut, ground cinnamon, baking soda, and salt. Stir well to evenly distribute the dry ingredients.

In a separate large bowl, cream the softened butter (or coconut oil) and brown sugar together until light and fluffy. Then, add the maple syrup, vanilla extract, and the egg, and mix until smooth and well combined.
