Ingredients

  • 2 cups almond flour
  • 1.5 cups rolled oats (certified gluten-free)
  • 0.5 cups sliced almonds
  • 0.5 cups honey
  • 0.5 cups almond butter
  • 2 tablespoons coconut oil
  • 1 teaspoons vanilla extract
  • 1 teaspoons ground cinnamon
  • 0.25 teaspoons salt
  • 0.25 cups mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 325°F (163°C). Line an 8x8-inch baking pan with parchment paper, letting the edges hang over for easy removal.

Step 2

In a large mixing bowl, combine the almond flour, rolled oats, sliced almonds, ground cinnamon, and salt. Mix until evenly distributed.

Step 3

In a small saucepan over low heat, melt the coconut oil, almond butter, and honey together, stirring continuously until smooth. Remove from heat and stir in the vanilla extract.

Step 4

Pour the wet ingredients over the dry ingredients in the mixing bowl. Use a spatula to fold everything together until the mixture is evenly coated. If using mini chocolate chips, gently fold them in at this stage.
