Ingredients

  • 1.5 cups Gluten-free all-purpose flour (with xanthan gum)
  • 0.5 cups Tapioca starch
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Plain unsweetened yogurt (dairy or non-dairy)
  • 2 tablespoons Olive oil
  • 2 tablespoons Warm water

Directions

Step 1

In a large mixing bowl, whisk together the gluten-free all-purpose flour, tapioca starch, baking powder, and salt until thoroughly combined.

Add the yogurt and olive oil to the dry ingredients, and use a spatula to mix until a crumbly dough forms.

Step 3

Gradually add the warm water, 1 tablespoon at a time, kneading with your hands until the dough comes together and is soft but not sticky. You may not need all the water.

Divide the dough into 6 equal portions and roll each portion into a ball.

Flip the flatbread and cook for an additional 1–2 minutes on the other side. Remove from the skillet and wrap in a clean kitchen towel to keep warm.

Step 8

Repeat with the remaining flatbreads, stacking them under the towel to keep them soft and pliable.
