  • 2 tablespoons Sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Powdered sugar (for garnish, optional)
  • 1 cup Fresh fruit (for serving, optional)
  • 2 tablespoons Maple syrup (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a 10-inch cast iron skillet or oven-safe pan in the oven while it preheats.

Step 2

In a blender, combine the gluten-free flour, milk, eggs, sugar, vanilla extract, and salt. Blend until the mixture is smooth and no lumps remain, about 30 seconds. Alternatively, whisk the ingredients together in a bowl until well combined.

Step 3

Carefully remove the hot skillet from the oven using oven mitts. Add the butter to the skillet and swirl it around to coat the bottom and sides of the pan evenly. The butter should melt completely and sizzle, but not burn.

Step 4

Pour the batter into the hot, buttered skillet. Return the skillet to the oven and bake for 18-20 minutes, or until the Dutch baby is puffy and golden brown around the edges.
