Ingredients

  • 1.5 cups Gluten-free all-purpose flour blend
  • 0.5 cups Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.25 teaspoons Salt
  • 0.75 cups Granulated sugar
  • 2 whole Large eggs
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoons Almond extract (optional)
  • 0.75 cups Semi-sweet chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a medium mixing bowl, whisk together the gluten-free all-purpose flour, cocoa powder, baking powder, and salt until well combined.

Step 3

In a separate large bowl, beat the granulated sugar and eggs using an electric mixer on medium speed until thick and pale, about 2-3 minutes.

Add the vanilla extract and almond extract (if using) to the egg mixture and mix until incorporated.

Gradually add the dry ingredients into the wet ingredients, mixing until a thick dough forms. Stir in the semi-sweet chocolate chips until evenly distributed.

Transfer the dough to the prepared baking sheet and, using wet hands, shape it into a long, slightly flattened log approximately 12 inches long and 4 inches wide.
