Ingredients

  • 3 cups Unsweetened shredded coconut
  • 0.75 cups Coconut sugar (or granulated sweetener of choice)
  • 3 large Egg whites
  • 1.5 teaspoons Vanilla extract
  • 0.25 teaspoons Salt
  • 1 teaspoons Coconut oil (optional, for greasing)

Directions

Step 1

Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper. Lightly grease the parchment with a small amount of coconut oil if desired.

In a large mixing bowl, combine the shredded coconut and coconut sugar. Stir well to evenly distribute the sugar.

Step 3

In a separate bowl, whisk the egg whites with a fork until they become frothy but not stiff. Add the vanilla extract and salt, then whisk again to combine.
